Zesty Corn Relish

zesty corn relish

Ingredients  
2 cups frozen whole-kernel corn, thawed

1/2 cup finely diced celery

1/2 cup finely diced green pepper

1 jar (2 oz) chopped pimento, drained

1/2 cup cider vinegar

1/3 cup sugar, more or less to taste

4 tsp Watkins Onion Flakes 

1 tsp salt

3/4 tsp Watkins Garlic Flakes

1/2 tsp Watkins Celery Seed   

1/4 tsp Watkins Black Pepper   

Directions
In medium bowl, combine corn, celery, green pepper and pimento; set aside. In small saucepan, combine remaining ingredients. Bring to a boil over medium heat, stirring occasionally. Boil 2 minutes. Pour hot liquid over corn mixture. Place in clean glass container(s), cover and refrigerate at least 4 hours.Makes 3 cups relish, 1/4 cup per serving.Directions to give with relish: Will keep in refrigerator up to five days.
